Look at those four numbers together. You've been eating less than most people half your size, and the weight still hasn't moved in two years. Your energy is at two out of ten. And you wrote that you snack a lot at night.
So here's my read. Eating that little for that long teaches your body to run on less. The scale stops moving, your energy goes first, and the night snacking is your body sending the bill for the day. You already named it on the form yourself: metabolic adaptation.
Which means the fix is not another round of eating less. There isn't much left to cut. The fix is rebuilding what two years of under-eating pulled down, and then losing the fat from a body that can afford to lose it.
